HONEY BAKED BEANS 
2 cups beans, washed
1/2 tsp. salt
1/4 lb. bacon (about 4 strips)
1 tsp. dry mustard
1/2 cup honey
1/4 cup molasses
1 onion, diced (or more, to taste)
3 whole cloves

Wash and pick over beans, removing any that are imperfect. Use Navy beans or other small white beans. Cover with two inches of cold water and soak overnight or bring to a boil for one minute on stovetop, remove from heat and soak for 2 hours.

When beans are ready to cook, bring to a boil, reduce heat to a simmer and continue to cook until almost tender but still not fully cooked. Put beans and remaining ingredients into a casserole or bean dish and place in preheated 300°F oven.

Bake for about an hour or until beans are browned and fully tender. Season to taste with salt and/or onion powder, if desired. Some like to add ketchup to their beans and serve with sliced hot dogs.

Depending upon how old beans are and how they were stored, they may cook in more or less time. They may also be prepared in a slow cooker. 3/4 cup of honey may be substituted for the 1/2 cup honey with 1/4 cup molasses - the molasses are used in New England Style baked beans.
