ITALIAN CROCK DISH 
2 lb. zucchini, cut into 1 1/2" pieces
1 (8 oz.) can stewed tomatoes
1 clove garlic, chopped (optional)
1/4 tsp. oregano
1/2 tsp. salt
1/4 tsp. pepper
Parmesan cheese, grated

Place zucchini in crock cooker and combine remaining ingredients over squash and cover. Cook at high for 2-4 hours or until zucchini is just tender. Serve topped with a sprinkling of Parmesan cheese. Serves 4-6.
