APPLE RASPBERRY COBBLER | |
4 lg. apples, peeled and sliced 2 c. raspberries or blueberries 1 c. sugar 1/4 c. flour 1/2 c. butter, softened 1/2 c. sugar 1 egg 1 tsp. vanilla 2 c. flour 2 tbsp. wheat germ or bran 1 tbsp. baking powder 1/4 tsp. salt 3/4 c. milk 2 tbsp. sour cream Combine apples, berries, 1 cup sugar and 1/4 cup flour in large bowl. Turn fruit into a greased 2-3 quart casserole dish. Cream butter and 1/2 cup sugar until smooth; add egg and vanilla and beat well. Whisk together flour, wheat germ, baking powder and salt. Add flour mixture to butter mixture alternately with milk and sour cream. Mix until batter is smooth. Then pour over top of fruit. Bake at 350 degrees for 50 minutes or until the top springs back when touched. Makes 6-8 servings. |
