OATMEAL RAISIN COOKIES 
1 c. raisins
1 c. hot water
2 c. oatmeal
1 c. brown sugar
2 1/2 c. flour
1/2 c. chopped walnuts
1 tsp. baking powder
2 eggs
1/2 tsp. baking soda
1 tsp. vanilla
1 tsp. cinnamon
3/4 c. oil

Boil the raisins for about 20 minutes, uncovered. Drain the liquid into a measuring cup. Add enough water to make 1/2 cup and then let cool. Cream the oil, sugar, vanilla, eggs, and raisin water. Add the dry ingredients. Mix well. Add the oatmeal, raisins, and the nuts. Mix again. Drop by flat tablespoonfuls onto an ungreased baking sheet. Bake at 350 degrees for about 8 to 10 minutes. Yields: 70 cookies.
