OATMEAL FRUIT COOKIES 
1 c. sifted flour
1 tsp. baking soda
1 c. water
1/2 c. chopped pitted dates
1/2 c. peeled and chopped apples
1/2 c. raisins
1/2 c. butter
1 c. quick cooking oats
2 eggs, beaten
1 tsp. vanilla
1/2 c. walnuts or pecans

Sift flour and baking soda together. Over medium heat, bring water, dates, apples and raisins to a boil. Reduce heat to low and simmer 3 minutes. Remove from heat and add butter. Stir until melted.

Pour into large bowl, cook slightly and stir in dry ingredients, oatmeal, beaten eggs, vanilla and chopped nuts. Stir until well blended. Cover and refrigerate overnight. Drop by heaping teaspoon 2 inches apart on ungreased cookie sheet. Bake in 350 degree oven 12 to 14 minutes. Cool on racks. Store in refrigerator. NOTE: THIS IS AN EXCELLENT RECIPE FOR PEOPLE WITH DIABETES.
