LYNN'S VICHYSSOISE 
3 med. leeks
1 med. onion
2 tsp. butter
4 med. potatoes, peeled
4 c. chicken broth
1 c. cream
Salt to taste
Pepper to taste
Chives or watercress for garnish

Slice and quarter onion and saute in butter. Add potatoes and chicken broth and simmer, covered for 15 minutes or until tender. Put in blender for 1 minute, add cream and seasoning to taste. Chill in refrigerator. Serves 6.
