BUTTERSCOTCH BARS 
3 c. flour
2 sticks butter
1 c. brown sugar

Make crust. Press into 1 large rectangle pan (jelly roll pan is nice) or 2 smaller pans, lightly greased. Make the edges come up slightly so it will hold filling. Bake 10 minutes at 350 degrees.

Next, sprinkle 1 can of cocktail peanuts (or mixed nuts) over the top of the crust.

Mix 1 package butterscotch chips, 1/3 cup white corn syrup, 2 tablespoons water and 1/2 cup brown sugar in saucepan. Heat, stirring constantly until chips are melted and mixture is smooth. Boil for 5 minutes.

Now spoon mixture over nuts in the crust. Return to the oven for 10-12 minutes until topping is golden brown. Cool overnight, if possible, before slicing into bars.
