POTATO SKINS 
4 med. potatoes, halved
1 c. sour cream
1 1/2 c. shredded Cheddar cheese
Bacon bits

Bake potatoes until tender. Cut in half. Hull stuffing out of potatoes, set aside. Deep fry potato skins in hot oil until crispy. Mix potato stuffing in a large bowl with sour cream. Put stuffing back into potato skins and top with Cheddar cheese. Sprinkle with bacon bits. Bake until cheese is melted in a 350 degree oven.
