BROILED POTATO SKINS 
4 to 6 lg. baking potatoes
2 tbsp. butter, softened
1/2 tsp. salt
1 c. finely shredded cheddar cheese
4 slices of crisply cooked bacon or jarred Hormel bacon bits

Prick potatoes with fork and cook in 425 degree oven until tender, about 1 hour. Cool. Cut each potato lengthwise into halves; scoop out insides leaving a 3/8 inch shell. Spread inside of shells with butter, sprinkle with salt. Sprinkle with cheese and bacon. Set oven to broil or 550 degrees. Broil potatoes 5 inches from heat until cheese is melted about 2 minutes.
