CHEESY POTATO SKINS | |
4 lg. baked potatoes 3 to 4 c. oil 1/4 c. flour 1/4 lb. Velveeta cheese, cubed 2 tbsp. chopped red or green pepper 4 slices bacon, crumbled 2 tbsp. diced green onions Sour cream Cut potatoes in half lengthwise. Scrape centers out of baked potatoes leaving 1/4 to 1/2 inch shell. Coat shells with flour. Shake off excess. Deep fry in hot oil at 375 degrees for 2 to 3 minutes until golden brown. Remove. Place in a baking pan. Top each with Velveeta cheese. Broil on bottom rack of oven until cheese starts to melt. Top with remaining ingredients. |
