BEEF STEW WITH TOMATO DUMPLINGS 
1 1/2 lb. beef cubes
3 tbsp. lard or drippings
1 1/2 tsp. salt
1/8 tsp. pepper
3 c. water
6 med. carrots
6 med. potatoes
2 tbsp. parsley

DUMPLINGS:

1 1/2 c. sifted flour
1 tbsp. baking powder
1 tsp. salt
1 egg, beaten
1 tbsp. lard, melted
1/2 c. tomato juice

Brown meat in large skillet; pour off drippings; add seasonings and water. Cover and simmer 2 hours; add vegetables; cover. Cook 30 minutes. Prepare dumpling batter. Drop by tablespoonsful on meat and vegetables. Cook 15 minutes, removing cover. Place stew and dumplings on platter, sprinkle with parsley and make gravy.

Dumplings: Sift dry ingredients together. Combine last three ingredients; add liquid ingredients to dry ingredients, stirring only until flour is moistened.
