HARVARD BEETS 
3 c. cooked, cubed red beets
2 tbsp. butter
2 tbsp. flour
1/2 c. sugar
1/2 tsp. salt
1/8 tsp. pepper
1/2 c. vinegar
1/2 c. hot water

Melt butter; add flour and blend to a smooth paste. Add vinegar water and sugar; cook until thick, stirring constantly. Pour the sauce over the beets; reheat and serve.
