SPINACH CASSEROLE 
2 boxes frozen spinach
3 pieces of bacon
1 medium onion, chopped
20 Ritz crackers, crumbled
1 can Campbell's Cream of Chicken Mushroom Soup
1/2 cup shredded cheddar cheese
1 tablespoon of lemon juice

Preheat oven to 350 degrees

1. Cook boxes of frozen spinach in microwave. Squeeze out all water. Place in 2-1/2 quart to 3-quart casserole dish.

2. Cook bacon, cut into 1-inch pieces, with chopped onions in microwave until bacon cooked.

2. Add can of soup, crackers, lemon juice, and bacon-onion mixture to spinach and mix together.

3. Mix in cheddar cheese.

Bake in oven for 20 minutes. (we like to double recipe and eat as main dish}
