TURKEY, RICE AND SPINACH CASSEROLE | |
1 lb. ground turkey 1/2 cup chopped onion 1 garlic clove 1 tbsp. olive oil 6 oz. baby spinach 1 (10 oz.) can cream of celery soup 1/2 cup rice 1/4 cup grated Parmesan cheese 1/2 cup mild cheddar cheese 1 tsp. soy sauce salt and pepper, to taste Sauté onion and garlic in olive oil. Once onion is soft add turkey seasoned with salt and pepper. Cook till brown. Add spinach and cook on medium-high for 5 to 10 minutes. Add cream of celery soup, soy sauce, rice and Parmesan cheese. Put in a greased 9x5-inch baking dish. Top with cheddar cheese. Bake at 350°F for 20 minutes. Submitted by: Amber Kennedy |
