PASTA AND FRESH TOMATO AND CREAM
SAUCE
 
12 fresh plum tomatoes
1 onion, diced
1 clove garlic, diced
4 tbsp. butter
Parsley
Oregano
Basil, fresh
Salt
Freshly ground black pepper
1/2 c. heavy cream
Fresh cooked pasta

Peel and coarsely chop tomatoes. Reserve juice. Mix tomatoes, juice, parsley, oregano, basil, salt and pepper. Let stand. Melt butter in large pan. Add onion and garlic. Saute for 10 minutes.

Add tomatoes, mix. Cook over medium heat 1/2 hour. Add cream. Heat through. Serve over fresh cooked pasta.

This was my first attempt at making a cream sauce. I used canned diced tomatoes (less labor intensive) and added shrimp. I guess I put in a decent amount of the herbs. I found it interesting that there were no measurements for these ingredients. But it was delicious!!

I wish there was exact measurements for this recipe, especially for the herbs. Overall it was a really good dish, rather simple too.
