DO AHEAD BEEF CASSEROLE 
1 med. green pepper, diced
1 1/2 c. chopped onion
1 1/2 c. diced celery
3 tbsp. vegetable oil
2 lbs. ground meat
1 1/2 tsp. salt
1/4 tsp. pepper
1 clove garlic, minced
1 (10 1/2 oz.) can tomato soup
1 (8 oz.) can tomato sauce
2 to 3 c. seasoned mash potatoes

Cook pepper, onion and celery in oil untill tender. Add beef and cook unti lightly browned. Pour off drippings. Add salt, pepper and garlic, tomato soup and tomato sauce. Turn mixture into 2 1/2 quart casserole. Spoon mashed potatoes around the edge of casserole. Cover tightly and refrigerate overnight. Place in cold oven, set at 400 degrees and bake, covered for 45 minutes, remove the cover and bake 10 to 20 minutes longer. If not refrigerated reduce baking time by 15 minutes. Serving for 6 to 8.
