BROCCOLI AND CHEESE CASSEROLE 
2 boxes frozen broccoli
1/4 stick butter
1/3 of 2 lb. block Velveeta cheese
2 bags crushed Ritz crackers
1/2 stick (or little more) butter

Steam broccoli in about 2 cups water; don't cook thoroughly. Drain and add 1/4 stick butter and Velveeta. Heat until pretty smooth and melted. Put in glass casserole. Melt 1/2 stick (or more) butter, add crushed crackers. Put cracker mix on top of broccoli in the casserole. Bake about 25 minutes at 350 degrees.
