SWEET POTATOES CROQUETTES | |
3 c. sweet potatoes, cooked and mashed 1/4 c. butter 1 tsp. salt 2 tbsp. brown sugar 1/2 tsp. cinnamon 1/2 tsp. nutmeg 1/2 c. pineapple, drained 1 egg Combine all ingredients. Shape into balls about 1 1/2 inches in diameter. Roll in egg and crumbs. Fry in deep hot fat (375 to 385 degrees) until browned. Drain on absorbent paper. Makes about 6 servings. |
