SWEET POTATO CROQUETTES 
1 pt. mashed sweet potatoes
1 tbsp. butter
1 tsp. salt
1 tbsp. sugar
1 egg white
Bread crumbs

Mash sweet potatoes and add salt, sugar and melted butter. Shape into croquette rolls or patties and chill in the refrigerator for 1/2 hour. Then roll in bread crumbs, dip in egg white, slightly beaten, and in crumbs again. Bake in a shallow, greased baking dish for 20 minutes in a 400 degree oven.

For a variation, place a marshmallow in the center of each potato roll, coating it completely.
