BEEF CROQUETTES 
Great for leftover roast beef! Makes 10 to 14 croquettes.

1 lb. cooked roast beef
1 serving - ready mixed mash potato
1 stalk celery
1/2 cup ketchup (Hunts)
soft butter

In food processor grind roast beef to fine mixture. Prepare 1 serving of instant potatoes per the box instructions on stove top and let cool.

In food processor or by hand, mince one stalk of fresh celery.

In large bowl place ground roast beef, instant potatoes, and celery. Add 1/2 cup of ketchup and mix ingredients to consistency.

Place non-stick cookie sheet next to bowl work area (I use parchment paper on the cookie sheet). With hands roll little balls of the mixture about the size of a tennis ball and place 1-inch apart on the cookie sheet. Press on each ball to flatten bottom to sheet to make croquette.

Using finger or thumb make a little dimple in the top of each ball (about half a finger nail depth deep). Using a spoon, scoop enough butter to fill the little dimple of each croquette.

Place cookie sheet with croquettes on middle rack in preheated 325°F oven and cook for 30-40 minutes or until shell of croquette turns a crusty red.

Remove and serve. Great with an applesauce side dish!
