SWEET POTATO CROQUETTES 
5 med. sweet potatoes (do not use yams)
2 tbsp. sugar
2 tbsp. butter
1 tsp. lemon juice
6 marshmallows
2 slightly beaten egg whites
2 c. crushed corn flakes

Cook sweet potatoes in jackets; peel and mash. Season with sugar, butter and lemon juice. Make croquettes by shaping potatoes around marshmallows. Chill 1 hour.

Dip into egg whites, roll in corn flakes and fry in hot oil or shortening until golden brown. Drain on paper towels and serve at once.
