POTATO DUMPLINGS MADE FROM RAW POTATOES | |
15 lg. potatoes 5 boiled potatoes 1-2 tbsp. cornstarch 1/4-1/2 hot milk (some recipes call for water instead of milk) Salt & pepper Croutons Peel potatoes and grate into water that has a bit of vinegar added to it to prevent the potatoes from turning black. Press the grated potatoes through a heavy cloth to extract as much liquid as possible. Pour the boiling milk over the moist potato dough. Let the milk soak in for a few minutes. Press the boiled potatoes through a potato press and add to the above. Add the remaining ingredients and shape into dumplings (place croutons in the center 1-2 per dumplings). Moisten hands in cold water to help shape the dumplings. Gently place into boiling lightly salted water. Cooking time depending on size 30-40 minutes. |
