HARVEST APPLE-NUT BREAD 
2 1/2 c. all-purpose flour
1 c. old-fashioned oats
1/2 c. chopped nuts
1 tbsp. baking powder
1 1/2 tsp. cinnamon
1 tsp. salt
1/4 tsp. nutmeg
1 1/4 c. firmly packed brown sugar
3 eggs
2/3 c. vegetable oil
1 tsp. vanilla
2 c. shredded apples

Heat oven to 325 degrees. Grease bottom only of a 9x5 inch loaf pan.

In a medium bowl, combine flour, oats, nuts, baking powder, cinnamon, salt, and nutmeg.

In a large bowl, combine sugar, eggs, oil and vanilla; mix until smooth. Stir in apples. Add flour mixture, mixing just until dry ingredients are moistened. Pour into prepared pan. Bake 1 hour and 10 to 15 minutes or until a wooden toothpick inserted in the center comes out clean. Cool 10 minutes and remove from pan. Cool completely on wire cooling rack. Yield: 18 slices (1 loaf).
