“BANANA CAKE” IS IN:

BANANA CAKE 
2 1/2 cups cake flour
1 2/3 cup sugar
1 1/4 tsp. baking powder
1 1/4 tsp. baking soda
1 tsp. salt
2/3 cup soft shortening
2/3 cup buttermilk or reg. milk
1 1/4 cup sieved, riced bananas (about 3)
2 large eggs

Grease and flour two 9-inch layer pans. Sift together flour, sugar, baking powder, baking soda, and salt. Add shortening, milk and bananas. Beat together for 2 minutes. Add eggs and beat 2 more minutes.

Bake in a preheated 350°F oven for about 50 minutes or until a toothpick inserted in center of cake comes out clean.

12 servings.
