LAURA'S STRAWBERRY BANANA CAKE | |
5 whole bananas, pureed 1 box yellow cake mix (I use Betty Crocker) 2 eggs 1 1/4 cups water 1/3 cup vegetable oil 1 (16 oz.) tub Cool Whip 2 cups sliced strawberries, divided Preheat oven to 325°F. Mix cake mix, water, bananas, vegetable oil and eggs in large bowl. Mix well until a pudding consistency. Bake cake at 325°F for 25 to 35 minutes or until toothpick inserted comes out clean. Remember that if making a layered cake adjust time accordingly. Allow to cool for a few hours. I found refrigeration to be the best! Then layer the cake either between layers or on top with a thick layer of Cool Whip. Follow that layer with a nice layer of sliced strawberries. Then coat the rest of cake, just as if you were icing it, with the Cool Whip. On top decorate with the remainder of the strawberry slices. Let chill in refrigerator for 30 minutes prior to serving.
