BANANA STRAWBERRY PARFAIT PIE 
1 9-inch pie crust
1 1/4 cups water
1 regular size pkg Strawberry Jell-O
1 pint vanilla ice cream
1 cup ripe bananas, sliced
whipped cream or topping (optional)
1 cup (or more if you like) sliced strawberries

Line a pie dish with 9-inch pie shell and bake according to package instructions. Cool.

In a 2-quart saucepan, bring 1 1/4 cups of water to a boil; remove from heat. Stir in 1 package of strawberry Jell-O. Continue stirring until Jell-O has completely dissolved.

Add 1 pint vanilla ice cream, cut into pieces, to hot liquid; stir until melted. Refrigerate until mixture has thickened to a soft jelly consistency, but has NOT set (about 15-20 minutes).

Fold in 1 cup sliced ripe bananas. Transfer Jell-O mixture to cooled baked pie shell.

Refrigerate until set (approximately 30 minutes). Serve with whipped cream or Cool Whip, if desired.

Top the whipped cream with sliced strawberries.

Makes 8 servings.
