BANANA NUT CAKE | |
2 c. cake flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. vanilla 1/2 c. Crisco shortening 1/2 tsp. salt 1 1/2 c. sugar 1 egg and 1 egg yolk, beaten together 1 c. mashed bananas 1/2 c. walnuts 3/4 c. buttermilk Sift flour and measure. Add all dry ingredients together and sift 3 times. Cream shortening and sugar and add the well beaten whole egg and egg yolk. Add mashed bananas and nuts. Now, add the flour mixture alternately with the milk to shortening and sugar mixture. Add vanilla and pour into two 9-inch greased and papered layer cake pans. Bake 30 minutes at 375°F. Frost with Sea Foam Icing. Sea Foam Icing: 2 unbeaten egg whites 1 1/2 c. light brown sugar 1/4 tsp. salt 5 tbsp. water 1/2 tsp. vanilla Combine all ingredients in top of double boiler, beating continuously while cooking over hot water. Beat 4 minutes or until it stands in peaks. Remove from heat, add vanilla and beat a few minutes with spoon. Makes 1 frosted 2 layer cake. Submitted by: Isabelle Durant |
