BAKED CHICKEN ROLLS 
1/2 c. chopped mushrooms
2 tbsp. butter
2 tbsp. flour
1/2 c. light cream
1/4 tsp. salt
Dash of cayenne pepper
1 1/4 c. shredded sharp Cheddar cheese
6-7 boned and skinned chicken breasts
2 eggs, slightly beaten
3/4 c. fine dry bread crumbs

Cook mushrooms in butter about 5 minutes. Blend flour; stir in cream. Add salt and pepper. Cook until mixture becomes very thick. Stir in cheese. Cook over low heat stirring constantly until cheese is melted. Turn mixture on a baking dish. Cover and chill about 1 hour. Cut into equal portions, shape into sticks.

Remove skin and bone from chicken. Sprinkle with salt. Place a cheese stick on each breast, Tucking in sides, roll like jelly roll, seal well. Dust rolls with flour. Dip in beaten egg, roll in crumbs. About 1 hour before serving, fry in deep fat 375 degrees for 5 minutes or until crisp and golden. Drain and place in shallow dish. Bake 350 degrees about 30-45 minutes. 6-7 servings.
