FRUIT LOG 
2 (3 oz.) pkgs. cream cheese, softened
3/4 c. sugar
2 tbsp. lemon juice
2 c. sour cream
2 drops red food coloring
1 (14 oz.) can salad fruits
1/3 c. chopped maraschino cherries
1/3 c. chopped pecans
2 1/2 c. miniature marshmallows

In a large bowl, combine cream cheese, sugar, lemon juice and sour cream; beat with a wooden spoon until well blended and light and fluffy. Add food coloring and stir to blend well. Stir in fruits, cherries, pecans, and marshmallows. Spoon mixture into 1 pound coffee cans. Cover and freeze 8 hours or overnight.

Remove from freezer and let stand 5 minutes. Remove bottom of can and push log out onto a serving plate. Let stand 10 minutes before serving. Serves 14-16.
