ORANGE - CARROT BREAD | |
2 1/3 c. sifted all-purpose flour 2/3 c. sugar 2 tsp. baking powder 1 tsp. cinnamon 1/2 tsp. baking soda 1/4 tsp. salt 1 1/2 c. shredded carrots 1/2 c. butter, melted 1/2 c. orange juice 1 egg, lightly beaten 1 tsp. grated orange peel 1 tsp. vanilla 1/2 c. raisins Sift together flour, sugar, baking powder, cinnamon, baking soda, and salt; set aside. In medium bowl combine carrots, butter, orange juice, egg, orange peel, and vanilla; mix well. Stir in raisins. Pour carrot mixture into dry ingredients; stir until combined. Spoon batter into greased and floured loaf pan. Bake in a preheated 350 degree oven for 40-45 minutes. (229 calories, 7 fat grams, 237 milligrams sodium, 23 milligrams cholesterol per serving) |
