ITALIAN COCONUT CAKE | |
2 c. sugar 1 stick butter 1/2 c. Crisco oil 5 eggs 2 c. flour 1 c. buttermilk 1 tsp. baking soda 2 c. coconut 1/2 c. pecans 1 tsp. vanilla Cream together sugar and butter. Add Crisco, 5 egg yolks, alternate flour and buttermilk, pecans, vanilla, soda and coconut. Beat 5 egg whites and fold into mixture. Makes 3 layer cake. Bake 30 to 35 minutes. at 350 degrees. ICING: 1 (8 oz.) pkg. cream cheese 1 stick butter 1 box powdered sugar 1 tsp. vanilla Mix and top with coconut. |
