BEST CARROT CAKE 
2 c. sugar
1 c. vegetable oil
4 eggs
1 tsp. vanilla
2 c. self rising flour
2 tsp. baking soda
2 tsp. cinnamon
3 c. finely grated carrots

Beat sugar, oil, eggs and vanilla together. Add flour, baking soda and cinnamon. Fold in grated carrots. Using two 8 inch round pans greased and floured, bake at 350 degrees for 30 minutes. Frost with Louise's cream cheese frosting.

LOUISE'S CREAM CHEESE FROSTING:

1/2 c. butter
1 (8 oz.) cream cheese
1 tsp. vanilla
1 lb. box confectioners sugar
1 c. chopped walnuts

Soften butter and cream cheese. Mix all ingredients and frost cake.
