ROMAN COUNTRY BEEF DINNER 
2 lbs. beef stew meat
2 tbsp. vegetable oil
1 (24 oz.) can whole tomatoes
1 (8 oz.) can tomato sauce
3 c. water
1 lg. onion, chopped
2 tsp. salt
1/2 tsp. dried oregano
1/4 tsp. thyme
5 oz. Ziti Rigatoni macaroni

Brown meat. Add tomatoes with juice, tomato sauce, water, onion, salt, oregano and thyme. Heat to boiling. Reduce heat, cover and simmer for 2 hours. Stir in macaroni. Heat to boiling. Reduce heat. Cover and cook until macaroni is done. Sprinkle with cheese. Serve with Italian bread with butter.

I use this exact recipe, but it calls for a 10 oz. package of frozen or fresh green beans. Fresh is, of course, better. They are delicious and help stretch the dish.

I have also found that flouring the meat before browning helps thicken the stew just a bit.
DO NOT SKIP THE 2 HOUR SIMMER.
