ROMAN CHICKEN | |
2 1/2 lb. chicken, cut up 1 clove garlic 1/2 c. onion, chopped 3/4 c. celery 3 1/2 c. canned tomatoes 1/4 c. water 1 1/2 tsp. dried parsley 2 1/2 tsp. salt 1/8 tsp. pepper 1/4 c. Parmesan cheese 1/2 tsp. oregano Brown chicken pieces in butter after rolling in flour. Remove chicken. Add onion, garlic and celery. Saute until tender. Add tomatoes, water, salt, pepper and oregano. Return chicken and simmer 45 minutes. Serve over rice. |
