CREAMED CHEESE CUPCAKES 
9 oz. cream cheese, softened
1 egg
1/2 c. sugar
1 tsp. vanilla
Fruit topping (cherries, strawberries, etc.)

Beat all ingredients (except topping) together until smooth. Pour into double paper cups. Bake at 400 degrees for 15 minutes. Pour on topping. Makes about 2 dozen.
