FROSTED BANANA NUT BARS 
1/2 c. butter
1 1/2 c. sugar
2 eggs
2/3 c. mashed ripe bananas
1 tsp. vanilla
2 c. sifted flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 c. milk
1 1/2 c. chopped nuts, divided

Cream butter and sugar until light and fluffy. Add eggs, beat well. Stir in bananas and vanilla. Sift dry ingredients; add alternately with milk, mixing well after each addition. Stir in 1 cup nuts. Spread evenly in greased and floured 10 x 15 x 1 rimmed cookie sheet (jelly roll pan). Bake at 350 degrees for 20 to 25 minutes until done. While warm, frost and sprinkle with 1/2 cup nuts.

Creamy icing: Combine 1 cup powdered sugar, 2 tablespoons butter, 2 tablespoons hot water and 1 teaspoon vanilla. Mix well.

This is a handy recipe when you only have 2 ripe bananas, instead of 3 for bananas nut bread.
