ENCHILADA PIE 
Las Palmas Chili Sauce (or similar) - try to avoid enchilada sauce (1 lg. can)
Corn tortillas (3 doz.) slice each tortilla in strips of 4
Ground beef - extra lean (2 lbs.)
1/2 onion chopped fine
1/2 bell pepper chopped fine taking seeds and white vein out
1/4 tsp. garlic salt
1/4 tsp. pepper
1 lb. Cheddar cheese (mild), grated
Foil (to cover pan)

Brown ground beef, drain. Add onion, bell pepper, garlic salt and pepper and saute until onion and peppers are tender. Add oil to large skillet and brown tortilla strips on both sides, drain strips on paper towels. Take the drained strips - 2 dozen and line 9x13 cake pan with them.

Next take the meat mixture and cover the strips. Next take 3/4 of the sauce and cover meat mixture. Take remaining 1 dozen of the strips and cover the meat mixture followed by the remaining sauce. Cover top with the cheese. Cook in preheated 350 degree oven for 15 to 20 minutes. Serves 6.
