SHEEPHERDER'S BREAD 
2 pkgs. yeast
3 c. warm water
2/3 c. melted shortening
1/4 c. sugar
2 tsp. salt
8-9 c. flour

In large bowl dissolve yeast, stir in shortening, sugar and salt. Let stand in warm place 5 to 10 minutes. Add 4 cups flour and beat well. Stir in enough flour to make dough stiff. Knead on a floured board until smooth. Place in greased bowl. Let rise 1 hour. Punch down and shape in smooth balls and place in a greased Dutch oven, cover with greased lid and allow to rise 1 hour. Place covered Dutch oven in 375 degree oven for 10 minutes. Remove lid and bake 35 minutes until sounds hollow. Makes 1 large loaf.
