STUFFED "RITZ" FISH 
1 1/2-2 lbs. fresh fillet of sole
1 1/2 sticks melted butter
2 sticks minced celery
1 sm. minced onion
1 "row" Ritz crackers, crushed
1 can crab meat, drained
1 tsp. dill
1 tsp. freshly ground black pepper
1/2 tsp. nutmeg
3/4 c. white wine
1/2 c. chopped walnuts (optional)

Crush crackers in food processor - add celery, onion and nuts. Blend in food processor until all ingredients are minced. Combine mixture with crab meat. Melt butter and add to mixture. Add wine and spices. Blend. Roll stuffing mixture inside fish. Arrange in baking dish. Dot with 1/4 stick butter slices. Bake at 375 degrees for 25 minutes or until fish is flaky.
