BAKED STUFFED FISH 
2 lb. your favorite fish (haddock, sole, cod, even shrimp)
1/2 box Ritz or Town House crackers, crushed fine
1 small onion, diced fine
1 bell pepper, diced fine
pinch of salt
pinch of black pepper
6 tbsp. (3/4 stick) butter, divided
2 tbsp. mayonnaise
1/4 cup parsley (fresh or dry)

In saucepan add 1/2 stick butter, salt, pepper, onion and bell pepper. Cook until soft.

Add crushed fine crackers and 1/4 cup parsley to saucepan. Mix well. Pull pan off stove and stir in mayonnaise. Mix well.

Stuff fish or shrimp. Arrange on baking sheet. Pour 1/4 stick melted butter over fish. Sprinkle parsley on fish or shrimp.

Bake at 400°F until fish is flaky, about 12 minutes.
