JUD'S RITZY FISH 
1 roll Ritz crackers
1/2 tsp. garlic salt (or powder)
1/2 tsp. Italian seasoning
1/4 tsp. black pepper
Mayonnaise
1-2 lb. white fish fillets (haddock, hake, cod, etc.)
13 x 9 inch baking dish

Preheat oven to 350 degrees. Crush Ritz crackers into crumbs; mix in spices. Spread thin layer of mayonnaise on all sides of fillets. Roll fillets in cracker crumbs. Place in baking dish. Bake for 25-30 minutes or until fish is tender. (Option - garnish with lemon slices before placing in oven.) Serves 4- 6 people the best tasting fish they ever ate! Enjoy!

Changed it up alittle bit, instead of ritz we used cheez-its and added some cayenne pepper. Our 4yr old liked it and ate it instead of the chicken he always eats!!

Very similar to my own recipe although I use panko crumbs for an extra crunch. For a "stuffed" variation chop some raw cleaned shrimp, mix with some mayonnaise, grated parmesan and lemon pepper. Spread generously on top of fish and spinkle with buttered panko crumbs. Bake.

I have something similar but I put milk in the bottom of baking pan then place the fish, then add a little butter over fish, then provolone cheese and lots of it and then the Ritz cracker crumbs and then bake at 350°F for about 35 to 40 minutes.
