KRUSCZYKI (POLISH PRETZELS) | |
3/4 c. butter 1 c. sugar 5 eggs 1 tsp. vanilla 4 to 4 1/2 c. flour 1 tsp. baking powder 1 generous pinch salt Powdered sugar Cream butter and sugar together until light and fluffy. Beat in the eggs, one at a time. Add vanilla. Sift together 4 cups of the flour, the baking powder and salt. Add this to the egg batter. If the dough seems too thin to roll, add what you need of the remaining 1/2 cup flour. Roll out on a lightly floured board to 1/4 inch thickness. Cut into strips 1 inch wide and 4 inches long. Make a 3 inch long slit in the center of each strip, starting and stopping about 1/2 inch from either end. Take up each strip in your hands and carefully fold the ends down, then up through the center slit. Fry a few at a time in deep hot fat at 375 degree until a golden brown. Drain on paper and sprinkle with powdered sugar while still hot. Makes about 4 1/2 dozen pretzels. |
