PINEAPPLE OATMEAL BARS 
1/2 c. butter or Crisco
1 c. uncooked quick oats
1 tsp. baking powder
1/2 tsp. salt
1 c. brown sugar
1 c. flour

Cream butter and sugar; add oats and mix well. Sift flour, measure and sift again with baking powder and salt. Add to creamed mixture and mix well. Press half of mix firmly into well greased and floured pan making layer 1/2" thick. Spread with pineapple filling and cover with remaining mix. Press top down firmly. Bake in oven at 350 degrees for 35 minutes. Remove from oven and cut in bars 1"x3" while still warm. Remove from pan.

PINEAPPLE FILLING;
1 c. crushed pineapple
3/4 c. sugar
1/2 tsp. salt
3 tbsp. cornstarch

Cook over low heat until mixture clears and begins to thicken. Remove from heat and add: 1 tbsp. lemon juice

Cool slightly before spreading.
