DIABETIC COOKIES 
1/2 c. chopped dates
1/2 c. raisins
3/4 c. butter
4 tsp. sweetener (Equal or other)
1 egg, beaten
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. salt
1 tsp. vanilla
2 med. bananas, mashed
1/2 c. chopped walnuts
3/4 c. quick cooking oatmeal

Pour 1/2 cup of boiling water over dates and raisins and let stand. Cream butter and add sweetener and beaten egg. Sift together flour, salt, spices and baking soda. Add dry ingredients to creamed mixture. Add vanilla, crushed bananas, nuts and oatmeal. Drop from teaspoon onto greased cookie sheet. Bake for 15 minutes in a 400 degree oven.
