SOUTHWESTERN MEATLOAF
"CALI-LOAF"
 
1 lb. ground buffalo (low fat)
1 lb. ground pork
1 (16 oz.) jar chunky medium salsa (I like Pace)
1 extra large egg
1 sandwich-size English muffin
1 large bag of white corn chips

Place the following ingredients in a large mixing bowl, and combine by hand (or with large spoon): chopped sandwich-size English muffin 1/4-inch size bits, pour chunky salsa, beat egg.

Breakup the ground meats into very small pieces, and place into the large bowl. Combine all completely.

Let mixture stand in refrigerator to absorb some of the liquids as oven is preheating to 375°F.

Place mixture in a 9x5-inch loaf pan (glass is best), press firmly into pan, with a mound towards the center length-wise.

Add personal extras at this time (i.e. onion rings, black pepper, bacon strips...)

Place in center of the middle rack.

Bake at 375°F for 1 hour (or till internal temperature reaches 165°F.)

Serve with (white) corn chips, and topped with more chunky salsa... and of course your favorite beverage!
