CHUCK KNOWLAND'S MEATLOAF | |
Leftovers make great sandwiches! 1 lb. lean ground beef 1 lb. lean ground pork 2 beaten eggs 1 medium minced onion 2 chopped dill pickles 1 (6 oz.) can sliced black olives, drained 1 (4 oz.) can mushrooms, drained 3 cloves minced garlic 1/2 cup ketchup (Hunts) 1 sleeve crackers, crushed (Saltines or Ritz) salt and pepper, to your taste Mix all ingredients in large mixing bowl. Put in loaf pan and cover top with a thin layer of ketchup. Cover with tinfoil and bake at 350°F for 45 minutes or till firm to the touch. Uncover and bake 5 minutes to caramelize the ketchup. Remove from oven, let meatloaf rest for 10 to 15 minutes before serving. Serve with boiled red potatoes and a vegetable. Submitted by: His Wife |
