DELICIOUS MEATLOAF | |
1 ½ lbs ground chuck ½ lb pork sausage 1 finely chopped green pepper 1 finely chopped sweet onion 1/2 sleeve Club Crackers, crushed 3/4 cup ketchup 1 egg, beaten Preheat oven to 325°F. Mix all ingredients well in large bowl. Transfer to greased loaf pan or shape into loaf using an 8x8 or 9x9 pan. Bake 1½ to 2 hours, until meatloaf is browned and crusty. About 10 to 15 minutes before it's done, spread the top with some ketchup and return to oven for the remainder. Drain grease from pan, or transfer meatloaf to a platter and allow to cool slightly before slicing. Refrigerate leftovers (leftovers make great sandwiches or filling for stuffed peppers).
