NEW AGE MEATLOAF PIE 
1/2 lb. lean ground beef
1/2 c. packaged dry seasoned bread crumbs
1/4 lb. fresh mushrooms, chopped (1 c.)
1 c. chopped onion
1 med. carrot, shredded
2 tbsp. chopped fresh parsley
2 lg. eggs, lightly beaten
1 tbsp. soy sauce
1 tbsp. prepared mustard
1/8 tsp. ground pepper

Preheat oven to 350 degrees. In a large bowl combine beef, crumbs, mushrooms, onion, carrot, parsley, eggs, soy sauce, mustard, and pepper. Put mixture into a 9-inch pie plate.

Bake in a 350 degree oven for 35-40 minutes. Let pie rest 5 minutes before cutting into wedges. Garnish with additional fresh mushrooms and carrot, if desired. Makes 6 servings.
