PUMPKIN PIE 
2 c. pumpkin
3/4 c. brown sugar
1/2 tsp. salt
1/2 tsp. cinnamon
1 tsp. vanilla
1/2 tsp. nutmeg
1 tsp. grated lemon rind
1 tsp. grated orange rind
1 2/3 c. soy milk
3 level tbsp. cornstarch

Mix ingredients well. Pour into pastry shell. Bake in hot oven at 425 degrees for 15 minutes. Reduce temperature to 375 degrees for 45 minutes. Makes 1 (9 inch) pie.
