ZUCCHINI PIE 
3 med. zucchini, sliced
1 med. onion, sliced
1/2 green pepper, sliced
1/2 lb. mushrooms, sliced
4 tbsp. butter
1 tbsp. soy sauce
1 tsp. garlic powder
Salt to taste
6 oz. shredded Monterey Jack or Mozzarella cheese
1/3 c. crushed buttery crackers
4 eggs
4 tbsp. milk
1/3 c. Parmesan cheese
2 tbsp. parsley

Stir-fry vegetables in butter until tender-crisp. Add soy sauce, garlic powder, and salt, while cooking. Mix together Monterey Jack cheese and cracker crumbs. Beat eggs and milk and add to cheese mixture. Mix vegetables and cheese mixtures together.

Pour into buttered 9-inch glass baking dish. Sprinkle Parmesan and parsley over mixture. Bake at 350 degrees for 45 minutes or until mixture is firm and golden brown.
